Saturday, December 19th: LOCAL GUYS COOK LOCAL FOOD: 10-12:30 Cooking demo at Gossett's Indoor Farmer's Market.  

This week's real guys cooking are John Imbiano and Richard Quigley, landscape architects at IQ Landscape Design, in Katonah. They'll be cooking John's secret pork chop recipe and Richard's famous venison! The Local Foods-Local Chefs series and the Local Guys Cook Local Foods series was created in order to inspire home cooking, show people how to use foods they may be unfamiliar with, foster a sense of connection with farmers and producers, and raise awareness of the complexity of flavors and nutrient density of sustainably raised produce and meats.

John Cronin: Brains vs. Brawn: the Future of Water, 7pm, Tarrytown

John Cronin's talk, "Brains vs. Brawn: The Future of Water," is set for 7 this evening at the Warner Library in Tarrytown.

John is one of the truly important figures in contemporary environmentalism, having been engaged in virtually every issue affecting the Hudson River and the Hudson Valley since the early 1980s.

He is now the director and chief executive officer of the Beacon Institute for Rivers and Estuaries and is a senior fellow for environmental affairs at Pace University's Academy for Applied Environmental Studies.

Free Event: Real Simple Whole Foods Cooking with Max Barry, Saturday, Dec 12, South Salem

Local Guys Cook Local Foods! Cooking demo at Gossett's Indoor Farmer's Market, Saturday, December 12th from 10-12:30.


This week's real guy cooking is Max Barry, a personal fitness trainer from Danbury. He's going to cook us  grilled sweet potatoes, grass fed beef and sauteed kale.  

Max says "I like to keep it simple, clean and local. Just a little salt, pepper and olive oil, and good quality basics and it's gonna be good. I've actually been developing a Spice Rub blend, that I came up with because I was eating too much salt. So in the process of finding one I liked, I got creative. I've ended up with a blend that just isn't available in a store, so you can try it out this weekend."

Bedford Climate Action Plan Public Meetings, Oct 5 & 13

Two more public meetings are scheduled to discuss the newly released Bedford Climate Action Plan. The Energy Advisory Panel would love to see a big attendance and to hear your thoughts!

Printed copies of the Draft of the Plan are available at each of the public libraries in Bedford, Bedford Hills and Katonah or by clicking here.

You may comment at public meetings on the draft of the CAP scheduled on:

Monday, October 5 at The Bedford Historical Hall;

Tuesday, October 13 at the Katonah Village Library.

Each of the meetings begin at 7.30pm.

If you cannot make the meetings, you may email comments to BEAP at bedfordenergy@bedfordny.info. The public comment period on the draft of the CAP ends October 14.

Bedford Draft Climate Action Plan
The Town of Bedford’s Energy Advisory Panel (BEAP) is pleased to present the Draft version of the Bedford Climate Action Plan for public review and comment.

In April, 2007, Supervisor Lee Roberts and the Bedford Town Board created the 9 member Energy Advisory Panel. In November of that year, the Town Board passed a resolution committing Bedford to a twenty percent reduction in community wide greenhouse gas emissions, below our 2004 baseline year, by 2020. The Bedford Twenty by 2020 goal was the beginning of a two year campaign designed to educate, engage and gain the commitment of the entire town. The Bedford Energy Advisory Panel has spent the last two years inventorying our community’s greenhouse gas emissions, talking to experts, researching other cities’ best practices and engaging the community through a series of town wide events. The result is this Draft of The Climate Action Plan.

The Plan focuses on four sectors; Energy, Transportation, Land + Water Use and Waste + Recycling. It is not a government plan or strictly for municipal use, but it encompasses businesses, residences, schools and virtually every segment of Bedford. Each sector outlines specific recommendations for reducing Green House Gases within Bedford.

he Draft CAP can be viewed online at www.bedfordny.info. Printed copies will also available at each of the public libraries in Bedford, Bedford Hills and Katonah. BEAP is asking for residents to help edit, critique and comment on the Draft by emailing the BEAP at bedfordenergy@bedfordny.info . There are also three scheduled public meetings on the Draft. The first of those meetings will take place Wednesday September 30 at Bedford Hills Community House with additional meetings taking place Monday, October 5 at The Bedford Historical Hall and Tuesday, October, 13 at the Katonah Village Library. Each of the meetings begin at 7.30pm. The public comment period on the CAP Draft ends October 14.

The First “Bountiful Backyard” Celebration

The inaugural season at Bylane Farm’s newly established pesticide-free, bird-friendly vegetable garden has been a smashing success. A ground-breaking Intergeneration Summer Program was held for children and seniors, and a whopping crop of 177 pounds of produce have been harvested and donated to the Mount Kisco Community Center.

As a fitting conclusion to this program and in celebration and appreciation of the many volunteers from Master Gardeners and others who have worked tirelessly through the summer to keep up the garden, we invite the community to a festive day at Bylane Farm.

The day’s program will include:

  • Workshops in harvesting/storing of vegetables (root cellaring and drying)

  • Demonstrations on how to attract birds to your garden and make bird houses from gourds

  • Book Sale - over 500 bird books will be offered for sale starting at $2.00 each

  • Nature walks with Naturalist Tait Johansson

  • Handouts, displays

  • Refreshments

Once Upon a Time, I Was Obsessed with a Plant: a Contest

Here's what's up: a new movie based on Michael Pollan's best selling "The Botany of Desire" will be airing on PBS next month. For those who like to mark their calendars, it's Wednesday, October 28, from 8-10 p.m. Called an "eye-opening exploration of the human relationship with the plant world - seen from the plant's point of view," and narrated by Frances McDormand, this is sure to be good. For those who haven't read the book, the idea is that we think that we control the plant world. But what if, in fact, they have been shaping us?

We have a director-signed copy of the movie, so we are introducing a new contest giveaway playing with the theme of the book. To enter, send us your story of a time you were obsessed (or at least taken up with) with something in the plant kingdom – like, going to great lengths to protect your tomatoes from frost, watching and waiting for your seedlings to come up, praying for rain for your crops, or spending a summer growing flowers for your wedding. Anything. Submit your story by October 18, and we'll announce the winner of The Botany of Desire DVD in our next newsletter. Stories will be published on the LocalHarvest website.

Hike at the Hunt-Parker Sanctuary, Friday, Oct 2nd

Our next walk will be on Friday, October 2nd at 1 p.m. at the Hunt-Parker Sanctuary owned by the Bedford Audubon Society at 35 Todd Road. (By the way, the Bedford Audubon Society, in spite of its name, is the local chapter of the Audubon Society which includes Lewisboro).

This walk begins with a long climb and then continues on lovely trails in the woods, ending at North Salem Road which we will cross and then continue east in the Mount Holly Sanctuary, which ends on Mt. Holly Road. Total distance will be about 3 miles of hills and valleys in the forest. This should take us a couple of hours, depending on how often we stop to look at things! Please wear boots as there are some steep places. We will meet at the Bedford Audubon Society's Bylane Farm at 35 Todd Road.

Directions: from the intersection of Route 35 and Route 22, go north on Route 22. Turn right onto Todd Road (there is a big white town shield-shaped sign) and when the dirt road turns into pavement, keep an eye out for #35. We will be there to help you park. At the end of the walk we will use one of our cars to ferry drivers back to Bylane for their cars.

Hunt for Black Walnuts, Croton Aqueduct, Mon, October 12th

Hunt for Black Walnuts on the Croton Aqueduct

On Columbus Day, Monday, October 12, naturalist/author "Wildman" Steve Brill will lead one of his world-famous Wild Food and Ecology Tours of the Croton Aqueduct in Dobbs Ferry, NY.

This long trail used to be where water was brought to Manhattan from Westchester. Now it's a beautiful walking and biking path lined with all manner of edible weeds. Here are some of the autumn plants we can expect on this tour:

We'll certainly find plenty of field garlic, a member of the onion/garlic family that comes up in the spring and re-emerges in the fall. Delicate chickweed, with a flavor like corn on the cob, is a likely find in sunny areas. Spicy poor man's pepper, spinach-flavored lamb's-quarters, and sour-flavored sheep sorrel and wood sorrel should be around too. Garlic mustard is another strong-flavored plant that will add zing to any salad or cooked grain or vegetable dish. The horseradish-flavored roots are in season at this time of the year.

Burdock, with a hearty, potato-flavored taproot, grows everywhere, and we're certain to find one location with soft soil where we'll be able to be able to dig it out easily. Other roots we're likely to find in overgrown areas include peppery-flavored common evening primrose, and white, chewy wild carrots, the same plant that produces the familiar Queen Anne's Lace flower in the summer. We'll also get to compare it with deadly poison hemlock, the plant that killed Socrates.

Black walnuts are among the tastiest and most nutritious of nuts, and they should be littering the ground under the huge trees. Everyone will learn how to remove the green husks, and crack the nuts open with rocks.

Spectacular mushrooms also abound at this time, especially if there have been recent heavy rains. Huge hen-of-the woods (sold in health food stores as maitake), gigantic chicken mushrooms (which really taste like chicken), golden-brown honey mushrooms, the prized aborted entoloma, various species of puffballs including the huge giant puffball, and savory meadow mushrooms may pop up anywhere along the trails.

The 2-hour tour begins at 1 PM, Monday, Columbus Day, October 12, at the intersection of Main St. and Cedar St. in Dobbs Ferry. To attend, call (914) 835-2153 at least 24 hours beforehand and reserve a place.

On Sunday, October 11, naturalist/author "Wildman" Steve Brill will lead one of his world-famous foraging tours at Green Chimneys, in Brewster, NY. Green Chimneys is the nationally renowned, non-profit organization with a mission of restoring possibilities and creating futures for children with emotional, behavioral and learning challenges through educational, therapeutic and outreach services, while providing care for animals and nature, thereby promoting a philosophy of dignity and worth for all living things.
These 3 foraging tours are part of the Annual Fall Harvest Festival. We'll be exploring a farm with plenty of open, sunny areas as well as woodlands, ideal for fall foraging.
Common edible "weeds" such as Asiatic dayflower, chickweed, wood sorrel, lamb's-quarters, and sheep sorrel grow in sunny areas throughout.

The trail sides are full of sassafras and black birch trees, while the ground may be littered with black walnuts, white oak acorns, and hickory nuts.
Roots are also in season in autumn. We'll be looking for common evening primrose, field garlic, and wild carrots.

This is an excellent place for wild mushrooms, especially if it's rained beforehand. We'll be on the lookout for honey mushrooms, aborted entoloma mushrooms, gigantic chicken mushrooms and hen-of-the-woods, oyster mushrooms, giant puffballs, and the enoki or velvet foot mushroom, which is prized in Japan.

The 3 walking tours run on Sunday, October 11, from 1 to 1:50 PM, 2 to 2:50 PM, and 3 to 4 PM, at Green Chimneys, 400 Doansburg Rd., in Brewster, NY. The tours are free with admission to the Fall Harvest Festival, $10/adult, $5/child.

Katonah Green Eat-In, Monday, September 7, 2-4

NATIONAL DAY OF ACTION!

On Monday, September 7th, from 2-4pm, Katonah Green, with Slow Food Westchester, will host an EAT-IN in support of the NATIONAL DAY OF ACTION to get better lunches in schools. RSVP HERE

This is free and open to the public! Bring friends, family, neighbors and a dish to share. The idea is to gather enough attention nationally that congress and our legislators will take notice that people care about what our kids eat at school. There are over 250 Eat-Ins happening nationally, the same day!

Details:

We'll be meeting and eating from 2-4 on Monday, September 7th at the First Presbyterian Church lawn.

What to Bring:
For last names from A-F, bring a a veggie salad.
Veggie salads can be a green leafy salad, or a cucumber-dill salad, or shredded carrots and cabbage--be creative!

For last names from G-S, please bring a seasonal entree reflecting the abundance of our local farms and gardens, for example:


  • your favorite chili,
  • simple pasta with fresh tomato sauce,
  • corn on the cob,
  • steamed local potatoes,
  • potato salad with fresh dill and chives,
  • grilled local sausage from a farmer's market,
  • grass-fed beef burgers,
  • grilled portabella mushrooms and red peppers,
  • local cheeses and fresh bread
  • your own favorite entree made with fresh local ingredients!

For last names from T-W, please bring a dessert reflecting the abundance of our local farms and gardens, for example:


  • fresh berries from Amawalk farm, or foraged on the BRLA
  • fresh melon from the local markets
  • fresh whipped cream (yum!)
  • zucchini bread (ask people, they are likely to have loads of zucchini right now!)

This is a carry-in, carry out event, and we will need to bring plates, cutlery, and serving utensils. My mission is to have only compostable waste, so my suggestion is to bring real plates, or biodegradable plates (available at TABLE Local Market in Bedford Hills, or at CVS in Ridgefield)

Ecofest is dedicated to promoting awareness of environmental issues and in doing so features exhibits and eco-booths run by environmental, information, alternative medicine and fitness, animal care, products, healthy food and solar and renewable energy technology organizations. There will also be music, dance and entertainment. Ecofest is free and open to the public.

Colonial arts and crafts will be offered for all ages; a nature photography workshop will take place, and guided hikes will be led during the main two days of the event. A dinner/concert/dance will kick-off the weekend on Friday September 4th.

They will have a chance to spend time together, to meet people doing food justice work around the country, and to learn some skills to help us build the world we all want to live in.

We need your help to raise at least $10,000 to send 20 farmers and their friends to Milwaukee. Come have a good time and bring your friends!

On Sunday, August 23, naturalist/author "Wildman" Steve Brill will give a free talk and presentation at Native Landscaping in Pawling, and lead one of his world-famous
Wild Food and Ecology Tours of the adjacent Appalachian Trail in Pawling, NY. The subject matter: foraging—the ecological harvesting and uses of common edible wild plants and mushrooms.

The free 60-minute presentation, followed by a 4-hour walking tour begins at 10:30 AM, Sunday, August 23, at Native Landscapes, 991 Route 22, in Pawling, NY. The Appalachian Trail is America's most famous hiking trail, running for hundreds of miles from Maine to Georgia. Our stretch is loaded with wild foods.

As soon as we depart from the railroad station where we meet, we'll find the huge leaves of burdock, with an edible root that tastes like potatoes. Nearby, we'll find loads of wild parsnips, garden escapees that taste even better than their commercial forerunners, plus lots of wild carrots, a.k.a. Queen Anne's Lace.

Other common herbs and greens we can expect include water mint and wild mint, lamb's-quarters, yarrow, purslane, sheep sorrel, wood sorrel, poor man's pepper, sassafras, water mint, various wild mustards, and black birch.

This common wetland species imparts a remarkably complex and satisfying flavor to any dish where mint is normally used.

We'll also find lots of jewelweed, a major medicinal herb with juice that relieves a variety of skin irritations, from insect bites to preventing poison ivy rash. In addition to the common species, spotted jewelweed, which has an orange flower, this is the only tour where we'll also find pale jewelweed, with its yellow flower.

If it has rained beforehand, the mushrooming should be as great as it was in past years. We may find large quantities of delectable parasol mushrooms, gourmet boletes, brittle russulas, smoky-flavored black trumpets, luscious meadow mushrooms, mild-flavored coral mushrooms, meaty hygrophorus milky mushrooms, and gigantic chicken mushrooms. Other unexpected species could easily surprise us.

LASTLY:
The reason I've been away is that my grandmother Marion passed away on July 20th. I am so very lucky to have spent her last afternoon with her looking at flowers and singing and left her having her last cup of green tea. She passed in her sleep that evening. Her name is Marion von Geldern, and to her I owe my love of gardening, organic food, caring about the welfare of animals and my love of cooking. Marion was one of the most loving, non-judgemental, optimistic and caring people I've ever met. This is a bit personal, but here is short video that I was able to make on that last afternoon. If I had known she would pass on that evening, I would have stayed with her for her last 2 hours, but am deeply grateful that I had what I had. Marion, I'll be loving you, always. Here's the link.

FRIDAY NIGHT GREEN is intended to provide a social setting for you to hang out with like-minded people and have fun!

Valerie is a local artist who has created fantastic artwork to support the awareness of solar energy! We'll see some art, and see the home that was featured in several news sources last year for it's awesome green renovation.

Here's an excerpt from the local paper on the Lynch's solar installation: "Peter and Valerie Lynch of South Salem recently completed a project that should take them entirely off the grid: a 5.46-kilowatt photovoltaic solar panel system that is expected to supply close to 100% of the electricity to their house, one of the first of its kind in Lewisboro..."

Hunt for Wild Wineberries at Ryder Farm


with naturalist/author "Wildman" Steve Brill


At 10 AM, Tuesday, July 21, naturalist/author "Wildman" Steve Brill will give a talk and lead one of his world-famous foraging tours of Ryder Farm, in Brewster, NY. The grounds of this long-standing organic farm are loaded with wild foods, and on this tour of this beautiful locale, we could be finding anything.

Fruit and berries are spectacular at this time of year. Wineberries will be at their peak. These Asian raspberries, which are easy to collect in quantity, are much more flavorful than their wimpy commercial counterparts. These juicy, sweet-and-sour berries are in season from mid-July to mid-August, and they grow in abundance in thickets throughout the northeast.

Blackberries are just coming into season. One of the most flavorful is the dewberry, an early-season species that trails the ground. We may also find the first ripe elderberries of the summer. They're not sweet, and they must be cooked, but they're great, sweetened, in pancakes, muffins, and breads.

Black cherries will also be in season. These native bittersweet fruits, with the flavors of cherry and grapefruit, are great raw, and superb cooked with a thickener and sweetener in all the standard puréed fruit desserts.

Plenty of herbs and greens are in season all summer. On this tour, we'll be looking for lamb's-quarters, purslane, wood sorrel, sheep sorrel, poor man's pepper, burdock, sassafras, jewelweed, and Asiatic dayflower, among others.

With lots of rain and a bit of luck, we could find gourmet mushroom species such as chicken mushrooms, chanterelles, boletes, and russulas.

The 30-minute talk followed by a 60-minute walking tour begins at 10 AM, Tuesday, July 21, at Ryder Farm, 400 Starr Ridge Rd., in Brewster, NY. The suggested donation is $15/adult, $10/child under 12. Please call (914) 835-2153 at least 24 hours in advance to reserve a place.
